Andouille is a coarse-grained sausage made using pork, pepper, onions, and seasonings. French in origin, it was brought to Louisiana by French or German immigrants and is mostly associated with Cajun cooking, where it plays a major role in dishes such as jambalaya, in addition to being served plain.
