You either love them or you hate them. There really doesn’t seem to be an in between. Oysters: those delicious, but yes, slimy, creatures from the sea. While you might think that there’s only one way to eat an oyster, there are actually a variety of ways, changing as you travel around the South.

Raw Oysters: This is probably the easiest way to eat an oyster. The secret to eating oysters raw lies in the sauce. A blend of cocktail sauce, a dash of tartar sauce, a little lemon juice and a good cracker, and you’re set!

Roasted Oysters: Having an oyster roast is a coastal tradition. Oyster roasts are to Charleston as crawfish boils are to Louisiana. They are social, labor intensive, and a heck of a lot of fun. The key? Make sure you have the right tools. You’re going to need a shucking knife and maybe a shucking board, and a good ones at that!

Oysters Rockefeller: Oysters Rockefeller equals pure decadence. It also happens to be perfect for those who aren’t exactly sure how they feel about oysters. Named after tycoon John D. Rockefeller and created in the famous New Orleans restaurant Antoine’s in 1840, Oyster Rockefeller consists of covering an oyster with herbs, butter sauce, and bread crumbs and then baking.

Oyster Shooter: This style of oyster consumption is for the brave. Or for those who really love oysters. An oyster shooter is exactly what it sounds like— it’s part oyster, part shot. Take a sauce similar to the blend you would use when eating oysters raw, put it in a shot glass, add a little bit of vodka, add a raw oyster, and toss it back!

Oyster Po-boy: We know, we know, eating a deep fried oyster, covered with bread and fixin’s isn’t exactly the same as eating a raw oyster, but we can’t help ourselves! There’s something about biting into that salty, fried oyster that makes our souls feel happy. And if that po-boy happens to be on the famous Leidenheimer bread, than we’re really happy!
