There's Something In The Water Posted by: Aaron Stearns | 0 Comments
There is no law that says bourbon has to be made in Kentucky, yet 95% of Bourbons are distilled there. There’s no law that says that American Thoroughbred horses need to be raised in Kentucky, yet most of them are.
Why is That? It is The Water.
Kentucky's limestone aquifer purifies the spring water while infusing it with delicious hints of calcium and magnesium. The result is a smoother, richer water, which is ideal for making bourbon, plus one with no iron, which would interact with the formulation of the bourbon mash turning it black. Although the art of making whiskey in Kentucky was originally more about farming and the abundance of the indigenous corn crop, in the 1800s, bourbon makers discovered the purity of the limestone water and the birth of a new American industry was rooted in Kentucky.
Kentucky's limestone water supply bubbles up from 150 feet deep through overalapping layers of limestone, infiltrating minerals to the water, filtering out certain undesirable compounds such as iron and heavy metals, and balancing pH levels. Thus the water source and its unique and distinctive characteristics has a profound impact on the specific flavors and tastes of the bourbon itself. Step into any distillery in Kentucky and "limestone water" will be a prominent player in that particular brand's story.
But the role of limestone water doesn’t stop with Bourbon. The horse farms sprinkled across the landscape of Kentucky also tells you a lot about the special water in the state. That same limestone water that is essential to making bourbon is packed full of calcium and magnesium, helping build strong bones in million dollar thoroughbreds.
So there you have it – the birth of two Industries in one place over the past 300 years – both with one common dominator – limestone water.
