Beaten Eggs Martini

The history of martinis go back to 1860s. The Vesper Martini is a variation of a martini that uses gin rather than vodka as its base liquor. It was created by Ian Fleming for his James Bond character in 1953 novel Casino Royale. It is a molecular mixology concept that utilizes the proteins from egg whites to create fluffy foam on cocktails. The protein, ovalbumin, unravels when you mix, beat or shake an egg white. 1 ounce pineapple juice
1½ ounces coconut water
1½ ounces mango vodka
Pineapple wedge for garnish


1. In a cocktail shaker, combine the pineapple juice, coconut water, and mango vodka.
2. Add ice and shake until chilled.
3. Strain the mixture into a poco grande glass and garnish with a pineapple wedge.
