Coconut lemonade is a very refreshing drink. A history of the cocktail is hard to find. There are many different versions of the story surrounding the drink’s origin. Some say it was invented by a bartender in South Carolina who was looking for something different than the usual summer drinks on the menu. Others say that it was created by two friends who were experimenting at home with what they had at hand – vodka, fresh lemons, and bottled coconut water they bought on vacation in Barbados.
Many people in Hawaii refer to it as “Hawaii’s favorite drink.” It is said to be a blend of coconut, pineapple, and lemon juice. Coconut water contains electrolytes which make it an ideal beverage for athletes.
6 ounces freshly made lemonade
2 ounces coconut rum
Lemon wheel and mint sprig for garnish
1. In a cocktail shaker, combine the lemonade and rum.
2. Add ice and shake to chill.
3. Strain into a Collins glass filled with ice.
4. Garnish with a lemon wheel and mint sprig.
