The Jamaican Fizz is a cocktail that is made with a blend of juices and soda water. The drink was created in the 1950s by a Jamaican bartender named Henry Burroughs, who served it at his restaurant called “Burroughs’ Restaurant of Coffee and Cocktails.” In the United States, the drink is typically made with grapefruit juice, club soda, and lime juice.

Ingredients

2 ounces Dark Rum
1 ounce Pineapple Juice
4 ounces Club Soda
1 tsp Superfine Sugar
Glassware: Collins Glass

Recipe

1. Shake rum, pineapple juice, and superfine sugar in a shaker with ice
2. and strain into a collins glass over crushed ice.
3. Add club soda and stir.
