Water Lily was first invented by Ngiam Tong Boon at the now defunct Long Bar of the Raffles Hotel Singapore on 1 December 1956. He called it “Water Lily” because he found inspiration for this cocktail from the flower which closed its petals during the night and opened to reveal its beauty during the day.
